Valentine’s Day Yummy & Healthy caramel truffles

Valentine’s Day treats can actually be super tasty and healthier than you might ever expect. Here’s proof with these healthy caramel truffles! I mean, chocolate, do i need to say anymore?…..

Healthy Caramel truffles recipe:

INGREDIENTS:


10 Medjool dates, pitted1 tbsp. unsalted almond butter
2 tsp. ghee (can sub coconut oil if vegan, but the ghee is truly the secret to the rich, caramel-y taste)
Dash of vanilla
A few pinches flaky sea salt
6 oz. dark chocolate

 

INSTRUCTIONS:

Blend dates, almond butter, ghee, and vanilla in a food processor until well combined, then stick in the freezer for 20 min.

While they cool, melt the chocolate over a double boiler until smooth and creamy.

Remove date mixture from freezer and roll into truffle-size balls. Using a toothpick, skewer each ball and dip into chocolate, before setting on parchment paper.

Sprinkle with sea salt before chocolate hardens completely, and enjoy. These keep well at room temperature for up to a week (perfect for gifting to that special someone!).
